Over a century ago, famed American inventor Thomas Edison predicted “the doctor of the future will no longer treat the human frame with drugs, but rather will cure and prevent disease with nutrition.” In Edison’s day, disease was existent but localized; and yet, in ours – Edison’s future – disease has become chronic and widespread. The top executioners in Western civilization are not the drugs and guns we often hear about; rather, chronic and often preventable diseases, such as Cancer, Heart Disease, and Diabetes.
Although traditionally prone to advocate the prescription of medications to regulate and control such conditions, more and more medical doctors are beginning to operate in Edison’s future – one where nutrition over drugs is the key to reversing many of these conditions.
The documentary Forks Over Knives chronicles the research of two such physicians: Dr. Caldwell Esselstyn and Dr. T. Colin Campbell. Both are medical doctors and pioneers in their fields of nutritional and biomedical research. They actively advocate a plant-based way of eating as a means of halting – and in many cases reversing – chronic illness.
Forks Over Knives chronicles the work of these men. Of particular focus, is their comprehensive long-term study where the correlation between animal-based diets and the development of degenerative disease was tracked among a number of populations in China.

Also a part of the movement is Dr. Esselstyn’s son, Rip, a world-class triathlete in his own right and creator of the Engine 2 Diet. Like his father, Rip encourages a whole-food, plant-based diet as a means to reverse pathology and regain health. Like his father, Rip has seen amazing reversals in health with this way of life. Engine 2 in The Kitchen, Rip goes into peoples’ homes and takes all of the food that is processed and has preservatives out of the pantry. He then takes them to Whole Foods to look at labels and shop. Afterwards, they go home and cook.

Many who have followed the Forks Over Knives/Engine 2 Diet have seen amazing reversals in their health. Atlanta Institute of Aesthetics Instructor, Carol Venclik, has personally experienced such a reversal. In a four part interview series, Carol sits down with ASM Wellness contributing writer Mycah Kirkland and chronicles her experience with Forks Over Knives and The Engine 2 Diet.
